iCooked: Easter Edition
So, it is has been a while since I’ve posted an “iCooked” entry… but to be honest, it has been a while since I’ve tried something new. That’s just life, I guess. In light of Easter, I wanted to share with you a dish that I have been “in charge” of since I was probably 9 years old.
It is a side dish we have for every holiday. Christmas. Easter. New Years. Last Tuesday. You name it, if we gather for a family meal … this salad HAS to be there. We call it simply, “The Orange Salad.”
I made a revision to it last Christmas–to a more Weight Watchers-friendly version at just 2 points a serving.
AND NO ONE EVEN NOTICED!!
Give it a try… it is quite tasty.
The Orange Salad
3 oz Sugar-Free Orange Jell-O Powder
1 cup(s) 1% low-fat cottage cheese
1 cup(s) canned Crushed Pineapple (drained)
1 cup(s) canned mandarin oranges juice pack (drained)
2 cup(s) bag Miniature marshmallows
8 oz Lite Whipped Topping
1 tbsp chopped pecans (optional)
In a medium bowl, mix Jell-O powder, pineapple, mandarin oranges, pecans (optional) and cottage cheese together. Add in Cool Whip. Lastly, mix in marshmallows and move mixture to a serving bowl (optional). Refrigerate for at least one hour before serving.
This sounds fascinating.
I’m not sure I’ll be able to convince Diane to eat it if I made it though (sans pecans of course)

calling it fascinating may be a stretch… but it is yummy nonetheless. whether Diane would eat it or not, i have no doubt that you could handle it on your own. it is THAT good.
We call it “purse salad” in my family — because it seemed like my grandma always just pulled it out of her purse for dinner. Not sure anyone ever saw her make it.
ok, so we called it orange stuff but it’s the same nonetheless.
i love its versatility …. wanna make pink stuff, green stuff? it just involves a different pack of jello.
this is my kind of cooking girl …. yummo!
